Copy Cat Banana Bread

My first baking adventure of 2016 (&KitchenAid)! As promised, I set out to make banana bread. I could have used a recipe from one of my many handed down cookbooks (&TrustedChurchRecipes) but instead chose to follow one from Pinterest. I will be working to improve the photos of my baking adventures, but for the first time (&NotLast) this will do. I chose this Copycat Starbucks Banana Nut Bread from http://cincyshopper.com/copycat-starbucks-banana-nut-bread/. Here goes nothing!
 
 
INGREDIENTS

 2 cup Flour
1 1/2 tsp baking soda
1/4 tsp Salt
2 tsp Cinnamon
1 tsp Vanilla
1 1/2 cup mashed ripe Bananas (3-4 small bananas)
1 cup Sugar
1/2 cup Vegetable Oil
2 tbsp Milk
1 Egg
1/2 cup chopped Walnuts
1/3 cup chopped Pecans
 
DIRECTIONS

 Preheat oven to 325.
Grease a loaf pan and dust with flour.
 
Whisk the flour, baking soda, cinnamon and salt until combined.
 
In another bowl, mix the egg, sugar, and vegetable oil until combined.
 
Add the dry mixture to the egg mixture and stir until blended.
 
Add the milk, vanilla, and mashed bananas and mix well. Fold in chopped walnuts
Pour batter into prepared loaf pan.
Top with remaining pecans.
 
Bake for 60-80 minutes or until a toothpick inserted in center comes out clean.
Let cool!

Then gently use spatula to remove from pan (&AdmireTheGoldenBrownGlow).
Cut off a Slice (&ThenSomeToShare)
 
 
The house smelled amazing (&Awesome) while this loaf was in the oven. Unfortunately, I found the crust to be dry and hard. Also, the inside of the bread did not have as much flavor as anticipated. Since I was using FRESH walnuts I had higher hopes. I think next time I will stick to an old-fashioned recipe (&StarbucksStick2Coffee). The Adventure Begins



I've declared 2016 The Year of Baking! Santa spoiled me with a beautiful (&sparkly) boysenberry KitchenAid stand mixer.  I can't wait to put it to good use and share my love through food over the next year. I hope to share my trials (&errors) and delicious successes through this blog. Feel free to share any tips, tricks, recipes, or requests! Happy New Year!
